Quick and Easy Recipe - Tuna and White Bean Salad
Preparation time : 15 minutes
Serving size : up to 8
Ingredients :
8 to 12 green olives with pimiento (rinsed and chopped).
3 tablespoons olive oil.
3 tablespoons white balsamic vinegar or white wine vinegar.
2 184-gram cans albacore tuna in water(drained, solid, or chunk type tuna).
1 tablespoon small capers, rinsed, chopped.(optional)
1 16-oz can of small white beans (drained and rinsed)
Garlic powder to taste.
Pepper to taste.
1/4 cup of chopped cilantro leaves
Procedure :
1. Drain and transfer tuna to your bowl or container. Break apart with a fork until flaky.
2. Fold white beans into tuna.
3.Toss in cilantro with the tuna then add olives and capers.
4. In another bowl or container, combine olive oil and balsamic vinegar. Season to taste with garlic powder and pepper. Toss with tuna mixture.
5. Serve as sandwich filling or with salad vegetables.
The traditional way of serving canned tuna is to mix it with mayonnaise to make tuna spread, which is far from what we do in this quick and easy recipe. Olives, beans and capers add flavors to the tuna and make it a light and refreshing sandwich filling.
If you find that this is too salty, remove or lessen either the olives or capers. This should be eaten within a few days; otherwise, the oil and vinegar become absorbed in the tuna and the salad becomes dry.
Great for lunch, as a sandwich filling, or mixed together with other salads.
