Quick and Easy Recipe - Tarragon Chicken and Shrimp Salad
Preparation time : 15 minutes

Serving size : 4 to 6

Ingredients :

6-8 Chicken breast fillets (diced).
2 tablespoons of corn oil.
1 clove garlic (minced).
3/4 cup of mayonnaise.
3/4 cup of sour cream.
1/2 cup of celery (finely chopped).
1/2 cup of cucumber (peeled and diced).
1/2 teaspoon dried tarragon or 1/4 cup of minced fresh tarragon.
1/4 cup of fresh parsley (minced).
1/4 kilo of medium shrimp (peeled and diced)
Salt and pepper.

Procedure :

1. Season your shrimp and chicken with salt and pepper then set aside.

2. Heat corn oil and saute garlic in a medium skillet until brown.

3. Add your chicken and saute until almost cooked.

4. Add your shrimp and stir fry until both shrimp and chicken are cooked fully. Remove from pan and let it cool.

5. In a bowl, combine mayonnaise, sour cream, cucumber, parsley, tarragon, and celery. Fold in chicken and shrimp.

6. Season with salt and pepper.

7. Put in fridge for one to two hours, serve chilled.
