Quick and Easy Recipe - Green Beans with Tofu
Preparation Time : 10 to 15 minutes
Cooking Time : 15 minutes.
Serving : 8 to 9 half cup servings
Ingredients for the vegetables :
1 medium onion, sliced thin (about half a cup).
1 400-gram can lentils, washed and drained.
1 400-gram butter beans, drained.
1 439-gram can red kidney beans, washed and drained.
Procedure :
Simply put all the vegetables in a bowl or bowl, preferably stainless steal, glass, or porcelain. Set aside until needed.
Ingredients for the sweet and sour vinaigrette dressing :
1 cup apple cider vinegar
1 cup sugar
1 teaspoon sliced ginger
1 teaspoon sliced garlic
1 and a half teaspoon salt
1/8 teaspoon pepper
Procedure :
1. Mix the dressing ingredients in a glass or stainless steel bowl/pot (do not use aluminum) Boil for five minutes over medium heat without stirring. Lower heat and simmer for 10 minutes.
Note: if preparing a larger serving, cook longer to evaporate most of the acid from the vinegar.
2. While still hot, pour over the salad. Serve straightaway or marinate at least overnight in the fridge. this keeps well for a week and is ideal as a quick siding for main dishes.
The beans absord the dressing nicely, giving each serving of beans that sweet and sour taste. For those not used to eating beans, the familiar taste of the dressing may help them get acquainted with the flavor and texture of these assorted beans. The inclusion of onions in the mixture perks up the texture and also adds some crunch to the salad. Enjoy! :)
