Quick and Easy Recipe - Green Beans with Tofu

Ingredients for sauce :
(optional) 1/2 table spoon tomato paste to add some tartness to the sauce.
2 table spoons hoisin sauce.
2 table spoons light soy sauce.
2 table spoons oyster sauce.
Procedure :
Simple enough, combine all ingredients in a small bowl or container, mix, then set aside.
Ingredients for vegetables and tofu :
Water (for boiling).
1/2 a kilo of tender green beans.
2 tablespoons of cooking oil.
1 tablespoon of julienned ginger.
1 tablespoon of crushed and chopped garlic.
3 stems scallions, including white part (finely sliced).
300 grams ground pork or ground chicken.
(optional) Red Chili paste.
6 firm tofu squares, cut into bite sized pieces (9-10 cubes per square).
2 tablespoons sesame oil.
Procedure :
1.Prepare your vegetables. Boil your water, and while waiting you should remove the strings from your beans.
2 Drop beans in boiling water, cook for 3 minutes or until crisp/tender. Immediately rinse with cold water to stop the cooking. Drain the beans.
3. In a wok, heat cooking oil and saute ginger, garlic and scallions until fragrant (around one minute). Add ground meat, cook just until brown. (around two minutes)
4. Add 1/3 of the prepared sauce to coat the meat. Continue cooking for 5 minutes over medium heat, then stir in the remaining sauce. Add chili paste if desired.
5. Gently mix in the tofu and heat through for 2 minutes. Add the cooked green beans and sesame oil and gently toss the mixture, taking care not to break the tofu. Serve over steamed rice.
The combination of hoisin sauce and oyster sauce makes this a truly Asian dish. The ground chicken meat which is well-flavored with the sauce is mixed evenly with the green beans and the tofu so that each bite carries with a good amount of flavor. It's a one-dish meal that is complete with vegetables, meat, and tofu, the last two being good sources of protein.
Note : You can make the sauce using 1:1:1 soy sauce : oyster sauce : hoisin sauce. Keep prepared mix in fridge to make cooking this recipe and other chinese meals a breeze.
