Quick and Easy Recipe - Fish Fillet Salad

Ingredients :

Cooking oil.
1 825-gram can fruit cocktail, drained.
1 cup of all-purpose flour.
1 egg, lightly beaten.
1 cup mayonnaise.
1/2 kilo fish fillets, sliced into 1 1/2-inches of cubes (preferably mahi-mahi).
1 1/4 teaspoons salt.
1/3 cup condensed milk.

Procedure :

1. In a pan, heat about 1 inch cooking oil.

2. Sprinkle salt all over fish cubes.

3. Dredge fish cubes in flour. Shake off excess flour. Dip cubes in egg, then in flour again.

4. Fry in until golden in hot oil. Transfer into a shallow container after draining oil. (Use paper towels to remove any excess oil)

5. Mix mayonnaise and condensed milk in a bowl. Combine fruit cocktail. Toss fish cubes with the mayonnaise fruit cocktail dressing.

For this recipe I used a mahi-mahi fillet, which was very tender and had no pins and bones attached to the fillet The sauce is sweet and creamy, with the fruits giving even more sweetness to the salad.
