Quick and Easy Recipe - Corned Beef Soup

Ingredients :

4 cups of water.
2 beef broth cubes.
2 tablespoons of cooking oil.
1 cup of whole kernel corn (drained).
1 medium potato (diced).
1 small carrot (diced).
1 190-gram can of corned beef, (flaked).
1 tablespoon of garlic (chopped).
1 medium onion (chopped).
1/4 cup of celery (chopped).
Salt and pepper.

Procedure :

1. Heat the oil and saute onions, corned beef, and garlic in a large pan or casserole. Stir-cook for about two minutes.

2. Add carrots, celery, potatoes. Stir once.

3. Crumble broth cubes over the mixture.

4. Add corn and water.

5. Simmer for about 10 to 12 minutes. Season to taste with salt and pepper. Serve hot.

A nice quick and easy soup to make when you have unexpected guests.
